Clos Saint-Jean Combe des Fous Châteauneuf-du-Pape 2007 is a powerful yet remarkably polished expression of old-vine Grenache from one of the southern Rhône’s most prized terroirs. Built for depth, perfume, and balance rather than sheer weight, it reflects the warm, stony character of La Crau and the estate’s skill in crafting wines with both generosity and finesse.
Tasting Notes
In the glass, the 2007 vintage shows a rich, mature profile with dark cherry liqueur, ripe black fruit, licorice, dried herbs, and warm stony nuances. The wine is full-bodied and creamy in texture, with rounded tannins and a supple, integrated feel that gives it impressive harmony.
Its aromatic complexity is now fully developed, moving beyond primary fruit into savory, earthy, and spice-driven layers. The finish is long, warm, and seamless, and the wine is at an excellent drinking window now, though its structure still gives it enough presence to remain compelling over the near term.
Production
This cuvée comes from very old Grenache vines planted on the hot, rocky parcels around La Crau in Châteauneuf-du-Pape, with smaller amounts of Syrah, Cinsault, and Vaccarèse adding structure and nuance. Grenache is fermented in concrete to preserve purity and aromatic intensity, while the other varieties typically undergo vinification with more structural focus and partial oak contact. Aging takes place in a balanced combination of stainless steel and large-format barrels, allowing the wine’s natural breadth and power to remain expressive without overt wood influence.
Food & Serving
This is an ideal match for slow-roasted lamb, beef daube, game, braised short ribs, or richly seasoned Mediterranean dishes with herbs and olives. Serve at around 16–18°C, and consider decanting for about 30–60 minutes if opened while still youthful in style, though the 2007 vintage is already beautifully open and harmonious.
