In the glass, this Grand Cru rosé shows a luminous, pale salmon-pink colour with fine, persistent bubbles that form a delicate mousse. The nose opens with elegant red berry aromas—wild strawberry, raspberry, and redcurrant—layered over notes of citrus zest, white flowers, chalk, and a gentle brioche nuance from time on lees.
On the palate, it is lively yet poised, with the Chardonnay providing a tense, mineral backbone and the Pinot Noir adding texture and a graceful red-fruit charm. Expect flavours of fresh strawberries, blood orange, pink grapefruit, and a hint of pomegranate, supported by a finely etched acidity and a long, saline finish. Production
This Cuvée Rosée is crafted from Chardonnay and Pinot Noir grown in Grand Cru villages of the Côte des Blancs, where deep chalk soils and cool, classic Champagne climate give the wines their hallmark tension and minerality. Grapes are hand-harvested at optimal ripeness to preserve acidity and aromatic finesse. The Chardonnay base wine is vinified with great care in temperature-controlled conditions, while a small portion of Pinot Noir—either as still red wine or delicately macerated juice—is blended in to achieve the desired colour and structure. After the prise de mousse (secondary fermentation in bottle), the wine rests on its lees for an extended period, enhancing texture, complexity, and finesse before disgorgement and a carefully judged dosage.

Claude Cazals Grand Cru Cuvée Rosée is a superb partner for refined cuisine as well as simple, elegant bites. Pair it with salmon tartare, tuna carpaccio, prawns, sushi and sashimi, or delicate charcuterie such as jambon de Paris and bresaola. It also shines with roast poultry, duck breast with berries, and soft cheeses like brie or young goat cheese. Serve well chilled at around 8–10°C (46–50°F). A brief 10–15 minutes in the glass is usually sufficient for the wine to open up; decanting is not necessary, but pouring into larger, tulip-shaped Champagne glasses will highlight its aromatic complexity and texture.
