The vines are cultivated with great care, typically harvested by hand in small crates to preserve fruit integrity and allow precise selection in the vineyard. In the cellar, Jean-Louis Chave follows a traditional yet sensitive approach: whole or partial bunches are often used to enhance aromatic complexity and structure, with fermentation taking place in temperature-controlled vats. The wine is then aged in a judicious mix of oak (often largely used barrels) to respect the character of the vineyard, resulting in a Syrah that balances purity of fruit, floral lift, and terroir expression rather than overt oak influence.
