Production
The vineyards sit on the limestone plateau west of Saint-Émilion, where old Merlot vines and a smaller proportion of Cabernet Franc are rooted in lively, well-drained soils. The estate is farmed according to biodynamic principles, and harvesting is carried out by hand in small parcels to preserve the character of each plot. In the cellar, fermentation takes place spontaneously, followed by ageing in French oak barrels designed to enhance structure without overwhelming the wine’s natural tension and purity.

Food & Serving
This is a wine that pairs naturally with roast lamb, beef fillet, duck breast, or braised dishes with mushrooms and herbs. It also works beautifully with aged hard cheeses. Serve at around 16–18°C, and while decanting is not essential, it is highly recommended if you want to open up the wine’s aromatics and texture, especially in a large-format bottle like this.
