In the glass, the 2009 Réserve Blanc shows a deep golden hue, reflecting both its age and concentration. The nose is generous and intricate, with notes of ripe stone fruits, preserved lemon, honeycomb, and baked pear, intertwined with hints of chamomile, almond, beeswax, and a subtle herbal lift. As it opens, more tertiary nuances emerge—dried apricot, lanolin, and a delicate nuttiness. The white grapes are typically sourced from old vines, carefully hand-harvested at optimal ripeness to preserve both richness and freshness. In the cellar, Rayas follows a traditional, low-intervention approach: gentle pressing, fermentation in neutral vessels, and aging in old wood and/or inert containers that avoid overt oak signatures, allowing the vineyard character and texture of the fruit to take center stage. The result is a concentrated yet finely balanced white Châteauneuf-du-Pape with the structure to age gracefully.

This mature 2009 Châteauneuf-du-Pape Blanc shines with rich, flavorful dishes such as roast chicken with herbs, veal in cream sauce, lobster or scallops with beurre blanc, and turbot or halibut with butter and truffle. It also works wonderfully with aged hard cheeses, richer soft cheeses, and dishes featuring mushrooms or root vegetables. Serve slightly cool, around 11–13°C (52–55°F), to allow the aromatics to fully express themselves—too cold and the complexity will be muted.
