Production
Château Rayas is famed for its cooler, sandy terroir in the northeastern sector of Châteauneuf-du-Pape, a stark contrast to the more galet-strewn sites of the appellation. The Rayas Blanc is traditionally based primarily on Grenache Blanc, often complemented by Clairette and other permitted white varieties, grown on low-yielding vines that capture both ripeness and natural acidity. Harvest is typically done by hand, with strict selection in the vineyard and at the cellar door to ensure only pristine fruit is used. In the winery, vinification is deliberately simple and traditional, often involving gentle pressing, fermentation in neutral vessels, and élevage designed to preserve purity, texture, and the natural expression of the estate’s singular terroir rather than overt oak influence.
Food & Serving
This Châteauneuf-du-Pape Blanc is superb at the table, pairing beautifully with rich seafood such as lobster, scallops, or turbot, as well as roast chicken, veal in cream sauces, and complex vegetable dishes featuring mushrooms, fennel, or truffle. It also works well with aged hard cheeses and richer soft cheeses that can match its texture and depth. Serve slightly cool, around 10–12°C (50–54°F), to allow the aromas and texture to open fully without muting the complexity.
