Château Pavie, Saint Émilion 1 2021

Château Pavie 2021 is a powerful yet refined Saint-Émilion red from one of Bordeaux’s most celebrated estates. A blend led by Merlot and supported by Cabernet Franc and Cabernet Sauvignon, it reflects Pavie’s distinctive limestone terroir while offering the structure and depth expected from a historic Right Bank grand cru. The 2021 vintage brings freshness and elegance to the château’s traditionally full-bodied style.

Tasting Notes
The wine shows a deep ruby colour with youthful violet highlights. Its aromatic profile combines ripe blackberry, black cherry and plum with floral notes of violet, alongside hints of graphite, crushed stone, spice and subtle oak. On the palate, Château Pavie 2021 is concentrated but fresh, with a supple, layered texture and finely structured tannins. Dark fruit flavours are balanced by mineral tension and a persistent, savoury finish. It can be enjoyed after decanting in its youth, but should develop further complexity over the next 10–20 years or more under suitable cellar conditions.

Production
The vineyards are situated on the limestone plateau and slopes of Saint-Émilion, where clay and limestone soils provide both richness and mineral freshness. Grapes are harvested by hand and carefully selected before fermentation in temperature-controlled vats, with each parcel vinified separately. The wine is then matured in oak barrels, allowing its fruit, structure and mineral character to integrate gradually.

Food & Serving
Serve at approximately 16–18°C after decanting for 1–2 hours when young; older bottles generally require only gentle separation from their sediment. Its depth and structured palate make it a natural partner for roast lamb, beef tenderloin, venison, duck and hearty mushroom dishes. It also pairs beautifully with mature hard cheeses.

Producer
Château Pavie is one of the landmark estates of Saint-Émilion, with vineyards whose history reaches back centuries. The estate entered a new era after its acquisition by Gérard and Chantal Perse in 1998, followed by major investments in the vineyards and cellar. Pavie was promoted to Premier Grand Cru Classé A in the 2012 Saint-Émilion classification, reinforcing its position among the appellation’s leading properties. The château later chose not to participate in the 2022 classification, but remains one of the region’s most recognisable and ambitious producers.
