Description
Château Pavie 2009 is a powerful and opulent Saint-Émilion from one of Bordeaux’s most celebrated estates. Produced in the exceptional 2009 vintage, this Premier Grand Cru Classé is known for its concentration, remarkable depth and polished expression of Merlot-led Right Bank Bordeaux.
Tasting Notes
Deep ruby-red with garnet reflections, the wine offers an intense bouquet of ripe blackberries, black plums and dark cherries, followed by violet, liquorice, spice and subtle mocha from oak maturation. On the palate, it is full-bodied and generous, combining lush fruit with layers of dark chocolate, espresso and mineral nuances.
The substantial tannic structure is rounded and well integrated, with fresh acidity providing balance to the wine’s richness. Château Pavie 2009 is drinking beautifully with decanting, while its concentration and structure give it considerable further ageing potential—easily developing through the 2030s and beyond when properly stored.
Production
The estate’s vineyards occupy a privileged position on the limestone slopes of Saint-Émilion, where excellent drainage and limestone-rich soils contribute both power and mineral freshness. The grapes are harvested by hand and carefully selected before fermentation in temperature-controlled vats. The wine is then matured in French oak, much of it new, allowing the ripe fruit, supple tannins and marked structure to integrate over time.
Food & Serving
Serve at 16–18°C after decanting for approximately two to three hours, particularly when opening the wine in the near term. Its richness and structure make it an excellent match for roast lamb, beef tenderloin, venison and other richly flavoured game, as well as truffle dishes, mature hard cheeses and slow-cooked beef cheeks.
