Château la Gaffelière’s Les Hauts de la Gaffelière 2021 is a polished Saint-Émilion red offering generous fruit, supple structure and classic Right Bank character. Tasting Notes
The wine displays a deep dark-cherry colour with a bright ruby sheen. On the nose, aromas of blackcurrant and black cherry are complemented by vanilla, warming spices and a subtle note of freshness. The palate is rounded, full-bodied and rich, with smooth fruit and a lingering finish marked by liquorice. The 2021 vintage is already enjoyable thanks to its generous texture, although a few years in bottle should allow the fruit, oak and spice notes to knit together further. It is best appreciated over the next several years, provided it is stored in cool, dark conditions.

Production
Les Hauts de la Gaffelière is made in the Saint-Émilion tradition, with a focus on preserving ripe fruit and balanced structure. The grapes undergo traditional red-wine vinification in stainless-steel tanks under carefully controlled temperatures, followed by approximately four weeks of maceration on the skins. The wine is then matured in oak barriques and larger wooden vats, adding gentle spice and complexity while retaining the wine’s fresh fruit character.

Food & Serving
A natural match for roast lamb, beef tenderloin, grilled entrecôte and slow-cooked beef dishes, it also pairs well with mushroom-based recipes, hard cheeses and classic French cuisine. Serve slightly below room temperature, around 16–18°C. Decanting for 30–60 minutes is recommended, particularly when opening the bottle in its youth, to soften the texture and bring out the aromatic detail.
