Château Haut-Blanville Pays Grande Réserve 2025 is a rich, expressive white wine from the Languedoc, crafted to showcase the region’s remarkable diversity of terroir. Tasting Notes
The wine has a clear straw-yellow colour with delicate silver highlights. On the nose, expressive aromas of flowers and ripe white fruit are complemented by hints of mango and gentle sweet spice, creating a layered and inviting bouquet.
On the palate, it is full-bodied and generous, with a rich texture supported by well-integrated acidity that brings freshness and definition. Refined fruit and floral nuances linger through the finish. It is delicious in its youth, while its structure and barrel influence should allow it to develop gracefully over the next few years when stored in good conditions.
Production
The grapes come from Château Haut-Blanville’s carefully selected parcels in the Languedoc, near Montpellier, within the wider Grés de Montpellier area. White grapes are pressed immediately after harvesting, then cooled to 5°C before the temperature is allowed to rise naturally. Fermentation takes place in new oak barrels, or the must is blended with existing wines, followed by regular bâtonnage for six to eight months. The wine is then transferred to stainless-steel tanks, where it settles naturally before bottling. The estate farms organically and with a strong focus on soil health, biodiversity and responsible stewardship of the surrounding environment.
Food & Serving
A natural partner for fish, this full-bodied white also works beautifully with grilled or roasted seafood, creamy fish dishes and goat’s cheese. Serve lightly chilled at around 10–12°C to preserve its freshness while allowing the rich aromas to open. Decanting is not essential, but a brief decant or 15–20 minutes in the glass can help reveal the wine’s floral, exotic and subtly spiced character.

Château Haut-Blanville was founded in 1955, when Béatrice and Bernard Nivollet began building their winery from the ground up in the Languedoc near Montpellier. Over the past two decades, the estate has carefully selected individual parcels and vinified their grapes separately to express the distinctive character of each site. Today, the domaine owns 70 hectares across five different terroirs within the Grés de Montpellier appellation, producing handcrafted wines that are highly valued by wine enthusiasts. Its organic and environmentally responsible approach is central to the estate’s identity and reputation.
