Description
Château Haut-Bailly 2017 is a refined Grand Cru Classé de Graves from Pessac-Léognan, known for combining the structure of Cabernet Sauvignon with the suppleness and perfume of Merlot. From one of Bordeaux’s most respected estates, this vintage offers classic Left Bank character with an elegant, approachable style and impressive ageing potential.
Tasting Notes
Deep ruby in colour, the wine opens with aromas of blackcurrant, blackberry and plum, complemented by violet, cedar, tobacco and a subtle mineral character. The palate is polished and concentrated, with ripe dark fruit, fine-grained tannins and well-integrated oak.
Fresh acidity brings balance, while hints of graphite, spice and dark chocolate add complexity on the long, persistent finish. It is already enjoyable with decanting, but should develop further over the next 10–15 years, with the best bottles capable of ageing beyond that.
Production
The vineyards of Château Haut-Bailly lie on the gravelly soils typical of the Pessac-Léognan appellation, with underlying sand and clay helping to provide both drainage and depth. The 2017 blend is based on Cabernet Sauvignon and Merlot, supported by smaller proportions of Cabernet Franc and Petit Verdot. Grapes are carefully harvested by hand, sorted, and vinified parcel by parcel before maturation in French oak, allowing the wine to gain complexity while preserving the estate’s characteristic freshness and finesse.
Food & Serving
Serve at 16–18°C after allowing the bottle to breathe. A decanting time of around 1–2 hours is recommended, particularly when drinking the wine in its youth. Its polished structure pairs beautifully with roast lamb, beef tenderloin, duck, venison, grilled mushrooms and mature hard cheeses.
