Description
Château Haut-Bailly 1996 is a classic Left Bank Bordeaux with the quiet confidence that only time can reveal. Built on a refined blend of Cabernet Sauvignon, Merlot, and Cabernet Franc, it combines structure, depth, and a distinctly elegant, mature profile from one of Pessac-Léognan’s most respected estates.
Tasting Notes
In the glass, this 1996 shows a deep, mature ruby-garnet color with the first signs of evolution at the rim. The bouquet is layered and appealing, with blackcurrant pastilles, mossy earth, a hint of gravel, and dried orange peel, followed by subtle savory notes that add complexity.
On the palate, it is medium-bodied, rounded, and well balanced, with a soy-like opening and a notably saline, maritime finish. Black olive and earthy tones linger on the finish, giving the wine a masculine, understated character. It is drinking beautifully now, and while it still has some life ahead, it is likely approaching the later part of its plateau.
Production
The 1996 blend is composed of 58% Cabernet Sauvignon, 30% Merlot, and 12% Cabernet Franc. Château Haut-Bailly’s vineyards sit on the gravelly soils of Pessac-Léognan, where well-drained terroir encourages the development of aromatic complexity, finesse, and firm but polished tannins. The vintage was vinified in the traditional Bordeaux style, with an emphasis on careful extraction and balance to preserve the estate’s signature elegance.
Food & Serving
This wine pairs beautifully with roast lamb, beef tenderloin, duck breast, or game birds, as well as mushroom-based dishes and hard, aged cheeses. Serve at around 16–18°C and consider decanting for 30–60 minutes if opening now, especially to let the mature aromas unfold gently.
Producer
Château Haut-Bailly is one of the historic names of Bordeaux, located in the Pessac-Léognan appellation and known for producing wines of finesse, balance, and longevity. Its long-standing reputation has made it a benchmark estate in the region, particularly for those who appreciate Cabernet-driven Bordeaux with elegance rather than sheer power. Over time, Haut-Bailly has earned admiration for its consistency and ability to age gracefully.
