Crafted from organically grown Cabernet Sauvignon and Merlot, it combines classic Bordeaux structure with generosity of fruit and a distinctly artisanal character. From an excellent, classically styled 2016 vintage, this is a bottle that brings together pedigree, precision, and real sense of place.

Tasting Notes
In the glass, the 2016 Le Chevalier shows a deep garnet core with ruby highlights at the rim, hinting at both concentration and freshness. The nose opens with intense aromas of blackcurrant, ripe black cherry, and plum, layered with dark chocolate, cocoa nib, and a touch of espresso. Subtle notes of cedar, cigar box, graphite, and warm spice mingle with dried thyme, rosemary, and a whisper of smoke, giving the wine a complex, almost meditative bouquet. On the palate, the wine is full-bodied yet beautifully balanced, with dense dark fruit at the core—cassis, blackberry, and Morello cherry—wrapped in fine, ripe tannins. Flavors of bitter chocolate, licorice, and crushed black pepper unfold alongside savory hints of roasted herbs and mineral undertones from the clay-limestone soils. The acidity is vibrant, lending lift and precision to the long, tapering finish. Structured and still youthful, the 2016 has excellent aging potential, with 10–15 years (and likely more) of graceful evolution ahead, gaining tertiary notes of leather, truffle, and dried flower over time.

Production
Le Chevalier is sourced from the estate’s best parcels in Côtes de Bourg, where vines grow on sun-exposed slopes of clay and limestone overlooking the Gironde estuary—terroir that naturally favors Merlot and Cabernet Sauvignon of depth and freshness. Château Falfas works organically (and biodynamically), with meticulous green work in the vineyard and hand-harvesting to ensure only perfectly ripe, healthy grapes reach the cellar. After careful sorting, the grapes are vinified traditionally: gentle extraction, native or low-intervention yeasts, and a long maceration to draw out color, aroma, and fine tannins without harshness. The wine is then aged in French oak barrels—typically with a proportion of new oak—for an extended period, allowing it to gain complexity, texture, and integration before bottling with minimal intervention.

Food & Serving
This structured but polished Bordeaux is a natural partner for richly flavored dishes: think roast lamb with herbs, slow-braised beef or veal cheeks, duck confit, venison stews, or a classic entrecôte with jus. It also works beautifully with earthy mushroom dishes, truffle risotto, and aged hard cheeses such as Comté, Gruyère, or mature cheddar. Serve at 16–18°C, ideally after decanting for 1–2 hours to allow the aromatics to unfurl and the tannins to soften. In its youth a longer decant is beneficial; as the wine matures, a shorter aeration will be enough to bring out its nuance.

Château Falfas is one of the historic addresses of Côtes de Bourg, with roots stretching back to the early 17th century and a long-standing reputation as a reference estate of the appellation. Under the stewardship of the Cochran family, the château became an early adopter of organic and biodynamic farming in Bordeaux, helping to pioneer a more environmentally sensitive approach in the region.
