Tasting Notes
Expect a deep, youthful ruby color with a concentrated, polished profile. The nose typically leans toward dark berries, wild herbs, and Mediterranean garrigue, with savory spice and a subtle earthy edge from the region’s rugged terroir. On the palate, the wine is structured and expressive, with Syrah bringing dark fruit and spice, Mourvèdre adding depth and grip, and Grenache and Carignan rounding out the blend. The low-yield vineyards give the wine both intensity and precision, while the firm tannins suggest good aging potential over the next several years.

Production
The grapes come from carefully selected parcels at the top of the hills, where shallow sandstone soils with very little clay and scarce water naturally keep yields low. Green harvesting is carried out, and the fruit is rigorously sorted to ensure only the best grapes make it into the final blend. The result is a wine shaped by dry, demanding terroir and precise vinification aimed at balancing concentration with elegance.

Food & Serving
This is an excellent match for grilled lamb, rosemary roast chicken, duck, or hearty Mediterranean dishes with olives and herbs. Serve at around 16–18°C, and consider decanting for 1 hour if opening young, especially to soften the tannins and open up the aromatics.

Château d’Aussières has roots dating back to 1065, when the estate belonged to the Abbey of Fontfroide and functioned as a farm and vineyard. After passing through revolutionary upheaval and a long period as a village wine estate, it was acquired in 1999 by Baron Eric de Rothschild, who transformed it into a high-quality wine property. Today it is regarded as one of Corbières’ noteworthy estates, known for reviving a historic site with a modern focus on excellence.
