Long regarded as one of the Right Bank’s benchmark wines, Cheval Blanc continues its tradition of crafting ageworthy, complex grands vins that captivate both collectors and curious enthusiasts.

Tasting Notes
In the glass, the 2021 Cheval Blanc presents a vibrant, deep ruby hue with youthful purple reflections at the rim. The nose is detailed and aromatic rather than opulent, revealing layers of wild red and black berries, blackcurrant leaf, violets, graphite, and fine spice, underpinned by subtle cedar, tobacco, and a hint of cocoa from careful oak aging. On the palate, the wine is medium to full-bodied, with a striking balance between purity of fruit and finely etched structure. Silky yet precise tannins frame flavors of red plum, black cherry, and blackberry, complemented by notes of licorice, pencil shavings, and fresh herbs. The 2021 vintage leans towards finesse and energy over sheer power, with a vibrant line of acidity giving length and lift to the finish. While already showing impressive harmony in its youth, this Grand Cru has the bones to evolve gracefully over 15–25 years, gaining further complexity, softness, and tertiary notes of truffle, leather, and forest floor with time in the cellar.

Production
Château Cheval Blanc sits on a uniquely complex patchwork of gravel, clay, and sandy soils at the border of Saint-Émilion and Pomerol, a terroir unusually favorable to Cabernet Franc on the Right Bank. The estate’s meticulously tended vines are harvested by hand in small, selective passes to ensure optimal ripeness and uncompromising fruit quality. After rigorous sorting in the cellar, the grapes are vinified parcel by parcel to preserve the character of each plot, typically in temperature-controlled vats. The final blend of Cabernet Franc, Merlot, and a touch of Cabernet Sauvignon is assembled after numerous tastings, then matured in French oak barrels (with a high proportion of new oak) to integrate structure, polish the tannins, and add subtle layers of spice without overshadowing the purity and precision of the fruit.

Food & Serving
This Saint-Émilion Grand Cru is a natural partner for refined, savory dishes such as roast lamb with herbs, beef tenderloin, veal chops, or game birds like duck or pigeon. It also pairs beautifully with earthy preparations featuring mushrooms, truffles, or root vegetables, as well as aged hard cheeses such as Comté or Parmigiano Reggiano. Serve at 16–18°C (60–64°F) to allow the aromatics and texture to fully unfold. In its youth, decanting for 1–2 hours is recommended to open up the nose and soften the tannins; as the wine matures, a shorter decant primarily to remove any sediment will suffice.
