Château Cheval Blanc, Saint Émilion 1 2021

Château Cheval Blanc 2021 is a distinguished Saint-Émilion red from one of Bordeaux’s most celebrated estates. Tasting Notes
The wine displays a deep ruby colour with violet highlights. Its bouquet is expressive and refined, revealing aromas of blackcurrant, blackberry and dark cherry alongside violets, graphite, cedar and subtle spicy nuances. On the palate, it is medium- to full-bodied, with polished tannins, vibrant acidity and a precise mineral character. Cabernet Franc brings freshness, floral lift and savoury complexity, while Merlot contributes depth and supple fruit. The 2021 vintage is approachable with decanting, yet it should develop beautifully over the next 15–25 years in a well-kept cellar.

Production
The vineyards of Château Cheval Blanc occupy a distinctive position on the border of Saint-Émilion and Pomerol, where gravel, sandy gravel and clay soils create excellent drainage while retaining enough moisture to support the vines. Grapes are carefully selected and harvested by hand, with individual parcels vinified separately to preserve their character. Fermentation takes place in temperature-controlled vats, followed by maturation in French oak, allowing the wine to gain texture and complexity while retaining the freshness that defines the 2021 vintage.

Food & Serving
Serve at approximately 16–18°C after allowing the bottle to come gradually to serving temperature. Decant for around 1–2 hours when drinking young to soften the tannins and open the aromas. Its structure and depth make it an excellent match for roast lamb, beef fillet, venison, duck, grilled entrecôte and refined dishes featuring mushrooms or truffle. It is also an excellent choice for a special occasion or a carefully curated Bordeaux collection.
