Château Cheval Blanc, Saint Émilion 1 2021

Château Cheval Blanc 2021 is one of Saint-Émilion’s most celebrated wines, renowned for combining the elegance of Cabernet Franc with the richness of Merlot. Produced at the historic estate on the border between Saint-Émilion and Pomerol, it reflects a distinctive terroir and the château’s long-standing reputation as one of Bordeaux’s great Right Bank names.

Tasting Notes
The 2021 vintage displays a deep ruby colour with violet highlights. Its refined bouquet opens with blackcurrant, blackberry and plum, followed by floral notes, graphite, cedar and subtle spice. On the palate, it is precise and fresh, with vibrant dark-fruit flavours, finely textured tannins and an elegant mineral character. The finish is long and balanced, with the structure and concentration to develop beautifully over the next 15–25 years, depending on storage conditions.

Production
The vineyards lie on a complex mix of gravel, clay and sandy soils, with the gravel-rich parcels contributing structure and aromatic lift, while clay helps retain moisture and supports the Merlot plantings. Cheval Blanc’s vineyards are harvested by hand, with careful parcel-by-parcel selection. Fermentation takes place in temperature-controlled vats, followed by maturation in French oak, allowing the wine to gain complexity while preserving the freshness and detail of the 2021 vintage.

Food & Serving
Serve at approximately 16–18°C after allowing the bottle to come gradually to temperature. Decanting for around 1–2 hours is recommended when drinking the wine young, although older bottles may benefit from gentler handling and a shorter decant. Its refined structure pairs particularly well with roast lamb, beef tenderloin, venison, duck, truffle dishes and mature hard cheeses.
