Château Canon, Saint Émilion 2023

Château Canon 2023 is a refined Saint-Émilion red from one of the appellation’s most distinctive limestone sites. Its combination of red and black fruit, floral lift, precise structure and chalky freshness reflects the character of the estate’s central position on the limestone plateau. Guided by Nicolas Audebert, the château continues to craft wines known for elegance, clarity and finesse.

Tasting Notes
The wine presents a deep, vibrant colour, followed by an expressive nose of ripe red and black fruits, delicate floral tones and a subtle chalk-like freshness. On the palate, it is poised and refined, combining lively tension with fine-grained tannins and a beautifully precise, lingering finish. The 2023 vintage has the structure and freshness to develop gracefully in bottle. While approachable with careful aeration, it should gain added complexity over the medium to long term as the fruit, floral notes and mineral character become more integrated.

Production
Château Canon is situated centrally on the limestone plateau of Saint-Émilion, with approximately 34 hectares of limestone and clay soils. The grapes are vinified parcel by parcel in temperature-controlled stainless-steel tanks and concrete vats, allowing the individual vineyard sites to be handled with precision. The wine is then matured partly in French oak, with a moderate proportion of new barrels to support the fruit and structure without overshadowing the wine’s mineral character.

Food & Serving
A natural partner for refined dishes featuring red meat, this Saint-Émilion is particularly well suited to roast beef, rack of lamb or delicately prepared poultry. Serve at approximately 16–18°C. Decanting for around one to two hours is recommended when enjoying the wine young; older bottles should be handled carefully and decanted only if necessary to remove sediment.
