Château Canon, Saint Émilion 2021

Château Canon 2021 is a refined Saint-Émilion Grand Cru Classé, celebrated for combining the richness of Merlot with the fragrance and structure of Cabernet Franc. Produced on one of Saint-Émilion’s renowned limestone sites, it is a poised, classic vintage that reflects both the estate’s distinguished history and the cooler character of 2021.

Tasting Notes
Deep ruby-purple in colour, the wine opens with aromas of black cherry, plum and wild berries, complemented by floral notes, subtle spice and a delicate mineral character. On the palate, it is elegant and focused, with fresh acidity, fine-grained tannins and layers of dark fruit, violet and gently savoury nuances. The finish is long and chalky, with the balance and structure to develop gracefully in bottle over the next decade or more.

Production
The château’s vineyards lie primarily on the limestone plateau of Saint-Émilion, with clay-limestone soils that contribute freshness, precision and a distinctive mineral character. Grapes are harvested by hand and carefully selected before fermentation in temperature-controlled vessels, followed by maturation in French oak. The 2021 vintage’s moderate conditions encouraged a wine of freshness, detail and classical balance rather than sheer power.

Food & Serving
Serve at 16–18°C after allowing the wine to come gently to temperature. A decanting period of around one to two hours is recommended when enjoying the wine young, helping its aromatic complexity to unfold. It pairs beautifully with roast lamb, beef tenderloin, duck, game birds, mushroom dishes and mature hard cheeses.

Château Canon is one of the historic estates of Saint-Émilion, named after the privateer Jacques Kanon, who acquired the property in the 18th century. It holds the prestigious status of Premier Grand Cru Classé B and has been owned by Chanel since 1996. The estate is particularly admired for its limestone terroir, precise winemaking and elegant, long-lived wines that rank among the most distinguished expressions of Saint-Émilion.
