Château Canon, Saint Émilion 2017

Château Canon 2017 is a refined Saint-Émilion Grand Cru from one of the appellation’s most distinguished limestone estates. Known for its elegant structure and remarkable precision, the château produces wines that combine the richness of Merlot with the aromatic lift and finesse of Cabernet Franc. The 2017 vintage offers a particularly graceful expression of the property’s terroir, with polished fruit and a firm yet balanced finish.

Tasting Notes
Deep ruby in colour, the wine opens with aromas of ripe blackberries, black cherries and plums, complemented by violet, cedar, graphite and subtle spice. On the palate, it is medium- to full-bodied, with silky tannins, vibrant acidity and concentrated dark fruit. Hints of tobacco, mineral and cocoa emerge as the wine develops, leading to a long, refined finish. It is approachable with decanting but has the structure and balance to mature further over the next decade or more.

Production
The vineyards of Château Canon are situated on the limestone plateau and slopes of Saint-Émilion, where clay-limestone soils provide both richness and freshness. The estate’s predominantly Merlot-based plantings are complemented by Cabernet Franc, and the grapes are carefully harvested parcel by parcel at optimum ripeness. Fermentation takes place with close attention to preserving the character of each plot, followed by maturation in French oak, resulting in a wine that balances ripe fruit, mineral precision and finely integrated oak.

Food & Serving
Serve at 16–18°C, ideally after decanting for approximately one hour to allow the wine’s aromas and texture to open. Château Canon 2017 pairs beautifully with roast lamb, beef fillet, duck, venison and richly flavoured mushroom dishes. It is also an excellent match for hard, mature cheeses such as Comté or aged Gouda.

Château Canon is a historic Saint-Émilion estate with origins dating back to the 18th century and is named after privateer Jacques Kanon, who acquired the property in 1760. The château occupies a prestigious position on the limestone plateau and has long been recognised for producing elegant, age-worthy wines. Since 1996, it has been part of the Chanel group, which has supported extensive vineyard and cellar improvements while preserving the estate’s distinctive identity.
