Chapelle d’Ausone is the second wine of the legendary Château Ausone, offering the estate’s distinctive Saint-Émilion character in a more approachable and accessible style. First released in 1995, it is made with the same precision, team and winemaking philosophy as the Grand Vin, expressing the property’s celebrated limestone terroir with remarkable elegance and freshness. The name refers to the historic 12th-century chapel located on the estate.

Tasting Notes
Deep ruby-red in appearance, Chapelle d’Ausone 2023 opens with refined aromas of black cherry, blackcurrant and raspberry, complemented by violet, graphite, cedar and subtle spice. On the palate, it is elegant and precise, with a beautiful chalky minerality, ripe yet polished tannins and impressive freshness. The finish is long, clean and harmonious, revealing the unmistakable signature of Ausone while remaining more immediately approachable than the Grand Vin. Although enjoyable with careful aeration in its youth, the wine has the structure, freshness and oak integration to develop further complexity in bottle. It should evolve gracefully over the medium to long term, with the potential to drink beautifully for many years when properly cellared.

Production
The grapes are sourced primarily from the estate’s younger vines, together with carefully selected parcels within Château Ausone’s exceptional Saint-Émilion vineyards, where limestone-rich soils contribute distinctive mineral precision. Following strict selection, the fruit is vinified parcel by parcel according to the estate’s meticulous approach. The wine is then matured for approximately 20 months in new French oak barrels, allowing its structure, finesse and complexity to develop while preserving its freshness and terroir expression.

Food & Serving
Serve at approximately 16–18°C alongside roast lamb, beef fillet, duck breast, venison or richly flavoured mushroom dishes. It also pairs naturally with refined preparations featuring truffle, herbs or roasted root vegetables. Decant for around 30–60 minutes when serving young to allow the wine’s aromatic detail and mineral character to unfold; older bottles should be decanted carefully and briefly, if at all.
