Chapelle d’Ausone is the second wine of Château Ausone, one of Saint-Émilion’s most historic and highly regarded estates. The 2019 vintage combines the estate’s characteristic limestone terroir with a polished, approachable style, offering an elegant introduction to the Ausone family while retaining considerable depth and pedigree.

Tasting Notes
Deep ruby in colour, the wine opens with aromas of ripe black cherry, blackberry and plum, complemented by violet, graphite and subtle spice. On the palate, it is refined and well balanced, with supple tannins, fresh acidity and a mineral edge that brings definition to the generous dark-fruit character. Hints of cocoa and gentle oak emerge on the finish. Enjoyable now with decanting, it should develop further complexity over the next 8–12 years when well stored.

Production
The grapes are sourced from Château Ausone’s exceptional vineyards on the limestone slopes of Saint-Émilion, where well-drained soils and natural water retention help preserve freshness and concentration. Chapelle d’Ausone is made from carefully selected fruit, including produce from younger vines and parcels not destined for the grand vin. Harvesting is carried out by hand, followed by careful sorting and temperature-controlled fermentation before maturation in oak, allowing the wine to gain polish without masking its mineral character.

Food & Serving
Serve at 16–18°C after decanting for around 30–60 minutes, particularly when enjoying the wine in its youth. Its elegant structure pairs beautifully with roast lamb, beef tenderloin, duck, venison and mushroom-based dishes, as well as mature hard cheeses. With bottle age, lighter preparations and finely seasoned poultry can also complement its developing savoury nuances.
