Château Ausone, Saint Émilion 1 2017

Château Ausone 2017 is a prestigious Saint-Émilion red from one of Bordeaux’s most historic estates, long recognised as a Premier Grand Cru Classé A. Produced in very limited quantities from vineyards rooted in exceptional limestone terroir, it combines remarkable precision and mineral freshness with the depth and structure expected from a great Right Bank wine.

Tasting Notes
The wine displays a deep ruby colour with youthful purple highlights. Its expressive nose reveals blackberries, ripe plum and cassis, followed by violet, graphite, cedar and subtle spicy notes. On the palate, it is concentrated yet refined, with finely grained tannins, bright acidity and a pronounced mineral character. The finish is long, detailed and persistent, balancing dark fruit with savoury, earthy nuances. Château Ausone 2017 has the structure to develop beautifully in bottle. While already showing impressive complexity with decanting, it should gain further aromatic depth and silkier texture over the next 15–25 years when stored in suitable conditions.

Production
The vineyards of Château Ausone occupy steep limestone slopes and a sheltered plateau above Saint-Émilion, where excellent drainage and mineral-rich soils contribute freshness, elegance and longevity. The grapes are harvested by hand and carefully selected before being vinified parcel by parcel, allowing the estate to preserve the character of each plot. The wine is matured in oak to support its structure and complexity while keeping the limestone-driven precision at the forefront.

Food & Serving
Serve at approximately 16–18°C after allowing the bottle to come gradually to temperature. Decant for around two to three hours when enjoying the wine in its youth; older bottles should be decanted more gently and primarily to remove sediment. Its depth and refined tannins pair beautifully with roast lamb, beef tenderloin, game birds, venison and richly flavoured mushroom dishes. It is also an excellent match for mature hard cheeses.
