In the cellar, Chapuis Frères work with a low-intervention mindset, fermenting with indigenous yeasts and keeping sulfur levels modest. The base wine then undergoes a secondary fermentation in bottle to create the mousse, followed by aging on the lees to build texture and subtle autolytic complexity. The Extra Brut dosage keeps residual sugar very low, allowing the terroir and natural acidity to take center stage.

This Extra Brut Blanc de Blancs is a natural match for oysters, shellfish platters, ceviche and simply prepared white fish, where its saline edge and crisp structure can shine.
