Tasting Notes
In the glass, Clos des Topes Bizot 2021 shows a pale lemon to light gold hue with a delicate brightness that hints at its tension and youth. The nose opens with citrus and orchard fruit—think lemon zest, green apple and pear—layered with white flowers, a touch of chalky stone, and subtle notes of fresh butter, hazelnut and a light, well-judged oak spice. On the palate, the wine is precise and medium-bodied, with a lively acidity that frames its creamy texture. Flavors of crisp apple, lemon curd and ripe pear are joined by hints of almond, brioche and wet stone, leading into a long, saline finish that feels both mouthwatering and persistent. At Domaine Chantal Lescure, the grapes are harvested by hand at optimal ripeness, with careful sorting in the vineyard and cellar to keep only perfectly healthy bunches. Fermentation typically takes place with indigenous yeasts in Burgundy barrels, followed by élevage on fine lees to build texture and complexity, with a discreet use of new oak so the terroir remains at the forefront. The result is a wine that speaks clearly of its site, crafted through minimal intervention and attentive cellar work.

Food & Serving
