Tasting Notes
In the glass, the 2012 Clos des Goisses shows a shimmering, intense golden hue, with a refined, persistent mousse that speaks to its careful aging on lees. The nose is generous and complex, opening with ripe pear, pomelo and white peach, then deepening into layers of honeycomb, macadamia nut and freshly baked bread. With air, hints of citrus oil, brioche and subtle floral tones emerge, adding further nuance and intrigue.
On the palate, this is full-bodied, broad and decidedly vinous, with a strikingly concentrated core of ripe fruit wrapped in a silky, finely textured structure. The mid-palate shows impressive weight and density, supported by bright, clear acidity and an impeccably fine, precise mousse. Flavors of stone fruit, candied citrus and toasted nuts unfold gradually, leading into a long, chalk-inflected finish. Youthful and even dramatic in its generosity today, this wine is still in the early stages of its evolution; in double magnum, it has excellent aging potential and will reward careful cellaring over two decades or more as further layers of complexity develop.
Production
Clos des Goisses is a historic, walled, south-facing vineyard in Mareuil-sur-Aÿ, widely regarded as one of Champagne’s finest terroirs. Its extremely steep slopes and pure chalk subsoil deliver remarkable ripeness, intensity and mineral tension, even in cooler years. The 2012 blend is dominated by Pinot Noir, supported by Chardonnay, all sourced exclusively from this single clos and harvested by hand at optimal maturity to capture both power and freshness. Vinification traditionally involves a high proportion of fermentation in oak, with meticulous plot-by-plot handling to preserve the unique character of the site. After the prise de mousse, the wine is aged extensively on its lees before disgorgement (April 2021), and finished Extra-Brut with a low dosage of 4.5 g/l, allowing the terroir’s natural richness and precision to take center stage.
Food & Serving
This is a gastronomic Champagne that shines alongside refined, richly flavored dishes. Think lobster with butter or beurre blanc, turbot or sole in creamy sauces, scallops, roasted poultry with truffle, veal sweetbreads, or mature hard cheeses such as Comté and aged Gruyère. It can also stand up to dishes featuring more luxurious ingredients like caviar or langoustine. Serve at around 10–12°C (50–54°F) to allow the complexity to unfold gradually. In this 3L format, decanting 30–45 minutes before serving is recommended, especially in its youth, to let the wine open up fully and reveal the full spectrum of its aromatics and texture.
