Sourced from over 30 carefully selected crus across Champagne, it marries the finesse of Chardonnay with the structure and fruit of Pinot Noir. Tasting Notes
In the glass, Palmer & Co Brut Réserve shows a bright straw-yellow hue with subtle green highlights, animated by a refined, persistent perlage of very fine bubbles. The nose opens with delicate white flower notes, followed by hints of fresh citrus, ripe orchard fruit and a gentle touch of roasted hazelnut and brioche.
On the palate, it is fresh, precise and distinctly vinous, with vibrant acidity framing flavors of lemon zest, green apple, and juicy pear, layered over tones of fresh-baked bread and pastry. The texture is creamy yet lively, offering both immediacy and complexity. While designed for near-term enjoyment, this Champagne will comfortably develop additional nuance for a few years in bottle, gaining more autolytic character and nutty depth.
Production
Palmer & Co Brut Réserve is sourced from an extensive mosaic of more than 30 crus, including premier and grand cru sites in the Montagne de Reims—renowned for Pinot Noir but also surprisingly high-quality Chardonnay—as well as Chardonnay vineyards in Sézanne and notable Pinot Noir vineyards in Verzenay and Mailly. The grapes are harvested by hand, as required in Champagne, allowing strict selection in the vineyard. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks to preserve freshness and purity of fruit, followed by full malolactic fermentation to bring roundness and harmony to the blend. A generous proportion of carefully aged reserve wines is incorporated to ensure depth, consistency and a signature house style, with extended lees aging in bottle contributing to its fine mousse and subtle brioche complexity.
Food & Serving
This Brut Réserve is a versatile companion at the table, pairing beautifully with oysters, shellfish, sushi and sashimi, as well as light fish dishes, creamy cheeses, poultry terrines and delicate canapés. It also shines as an apéritif, where its freshness and finesse can take center stage. For optimal enjoyment, serve at around 8–10°C (46–50°F); avoid over-chilling, as too low a temperature will mute the aromas and flavor. Rather than a narrow flute, pour it into a medium-sized white wine glass to allow the bouquet to open, and consider opening the bottle 30–60 minutes before serving to let the wine fully express its character.
