Champagne Marguet Sapience Brut Nature Premier Cru 2010 is not just a Champagne, but a statement of biodynamic winemaking at its most ambitious. Created by Benoît Marguet with Hervé Jestin, it is regarded as one of the first 100% biodynamic prestige cuvées, bringing together rare precision, depth, and a quietly powerful sense of place.

Tasting Notes
Sapience 2010 shows a refined golden hue with an exceptionally fine mousse. The nose is layered and complex, unfolding with candied citrus, yellow apple, dried pear, toasted hazelnut, brioche, and a chalky, almost iodine-like mineral note. With air, more evolved nuances of walnut, honey, and hay emerge, adding depth without losing freshness. The palate is intense and vibrant, marked by a dense texture, razor-sharp acidity, and a long, saline finish. Its structure and balance suggest excellent aging potential, and while it is already deeply expressive, it will continue to gain complexity over time for those who appreciate mature, contemplative Champagne.

Production
Sapience 2010 is built from biodynamically farmed fruit sourced from three distinct villages: 50% Pinot Meunier from Cumières, 25% Chardonnay from Trépail, and 25% Pinot Noir from Bouzy. The wine is fermented spontaneously in small barriques, with no chaptalization, fining, or filtration, and it is bottled with zero dosage. After nine years on lees before disgorgement, the 2010 vintage delivers both tension and breadth, shaped by a cool but structurally strong growing season.

Food & Serving
This Champagne is ideal with fine seafood, shellfish, aged hard cheeses, roast poultry, or dishes with earthy umami depth such as mushrooms or truffle. Serve it well chilled, around 8–10°C, and consider giving it a short period in the glass to open up. Decanting is not essential, but it can be beneficial for allowing its more evolved aromas to fully unfold.
