Champagne Chavost Rosé de Saignée Brut Nature 2022 is an expressive, food-friendly rosé Champagne made exclusively using the traditional saignée method. Composed of 67% Pinot Noir and 33% Pinot Meunier, it offers a more vinous and structured style than many lighter rosé Champagnes, with the character of red wine alongside fine sparkling freshness.
Tasting Notes
The wine shows a delicate rosé hue, with its colour drawn naturally from brief contact between the juice and the red grape skins. On the nose, it is expressive and fruit-driven, revealing aromas of fresh red berries and the savoury depth associated with Pinot Noir and Pinot Meunier.
On the palate, it is dry and energetic, with a powerful structure and a distinctly vinous character. The red-fruit profile is supported by refreshing Champagne acidity and a firm, food-friendly finish. As a Brut Nature, it is made with little to no added dosage, allowing the fruit, texture and site-driven character to come to the fore. It is best enjoyed in its youth for freshness, though its structure should allow it to develop further complexity with careful short-term cellaring.
Production
This rosé Champagne is produced entirely by saignée: the red grapes macerate in a stainless-steel tank until sufficient colour and flavour have been extracted from the skins. The juice is then drawn off and matured further in wooden barrels, giving the wine additional texture and depth while preserving its expressive fruit character. The cuvée is made from Pinot Noir and Pinot Meunier; specific vineyard sites, harvesting practices and élevage duration are not provided.
Food & Serving
Its dry, structured style makes it a versatile partner for charcuterie, roast poultry, duck, grilled salmon, tuna and richer seafood dishes. It also works particularly well with mushroom-based dishes, lightly spiced cuisine and soft, mature cheeses. Serve well chilled at approximately 8–10°C. Decanting is not essential, but a brief pour into a wide Champagne glass or a short rest after opening can help reveal its more vinous aromas and texture.
