Tasting Notes
In the glass, this 2018 vintage typically shows a pale gold color with green reflections, hinting at its freshness and finesse. The nose is bright and layered, with notes of white flowers, lemon zest, green apple, wet stone, and a subtle hint of chalky minerality. On the palate, it is crisp and focused, balancing citrus-driven freshness with a supple, rounded texture that reflects the warm and generous 2018 growing season. Production
The Premier Cru Vaillons vineyard sits on the classic Kimmeridgian limestone soils that define Chablis, giving the wine its signature tension and mineral precision. La Chablisienne works with carefully selected parcels and vinifies the wine to preserve the site’s natural clarity, typically favoring cool fermentation and thoughtful élevage to maintain freshness and terroir expression.

Food & Serving
This wine pairs beautifully with oysters, shellfish, grilled white fish, sushi, goat cheese, and poultry in light cream sauces. Serve chilled at around 10–12°C, and decanting is generally unnecessary unless the bottle is showing especially tightly at opening.
