Tasting Notes

Production
Villarode is born in the rolling hills around Montefalco in Umbria, where vineyards benefit from a continental climate with warm days, cool nights and constant air circulation from the Apennines. The soils here are a mix of clay, limestone and marl, which naturally limit yields and give Sagrantino both power and mineral drive. Grapes are typically harvested by hand to ensure only perfectly ripe, healthy clusters are selected, an essential step for a variety as tannic and concentrated as Sagrantino. In the cellar, long macerations extract color, aromatics and structure, followed by slow fermentation under temperature control. The wine then spends an extended period in oak (often large barrels or a combination of barrique and larger casks) and further time in bottle before release, allowing the imposing tannins to integrate and the complex bouquet to fully unfold.

This is a natural partner for rich, hearty dishes and intensely flavored cuisine. Think slow-braised lamb shanks, ossobuco, game meats, grilled bistecca alla fiorentina, aged pecorino, or truffle-infused dishes from central Italy.
