Cesari Valpolicella Ripasso Superiore Bosan is a rich, characterful red from Veneto that showcases one of Valpolicella’s most celebrated traditional methods: ripasso. Made from Corvina and Rondinella, it offers the depth and complexity of a wine with real regional identity, while remaining elegantly drinkable and food-friendly.

Tasting Notes
In the glass, it shows a bright, intense purple hue that immediately signals youth and concentration. The nose is generous and inviting, with aromas of red fruits, ripe cherry, and warm spice. On the palate, it is full-bodied and harmonious, with well-integrated acidity that keeps the wine fresh and balanced. The finish is velvety and persistent, leaving subtle notes of chocolate and toasted coffee. While enjoyable now for its richness and softness, it also has the structure to develop well over the next few years.

Production
Produced in Veneto by Gerardo Cesari, this Valpolicella Ripasso Superiore Bosan is crafted from 80% Corvina and 20% Rondinella. The ripasso technique, deeply rooted in the Veronese tradition, involves refermenting the wine on the skins used for Amarone-style production, adding extra body, complexity, and depth. The result is a wine with layered fruit, refined structure, and a more intense expression of the Valpolicella style.

Food & Serving
This wine is an excellent match for grilled or roasted red meats, braised dishes, and mature cheeses. Serve it at around 16–18°C to allow its aromatic richness and supple texture to shine. A short decant of 20–30 minutes can help open up the bouquet, especially if the bottle is enjoyed young.
