As it unfolds, delicate hints of cocoa, violet, and graphite add further complexity. On the palate, the wine is full-bodied, layered, and energetic, with a fine core of dark berry fruit framed by polished, powdery tannins. Certan de May lies on the prized plateau of Pomerol, where clay and gravel soils over an iron-rich subsoil provide ideal conditions for Merlot-based blends to achieve both power and finesse. The 2019 is crafted from the estate’s well-situated parcels, harvested by hand to ensure meticulous selection of only the healthiest, ripest bunches. In the cellar, fermentation takes place in temperature-controlled vats to preserve fruit purity and aromatic detail, followed by élevage in a significant proportion of new French oak barrels. The careful integration of oak enhances texture and complexity without overshadowing the wine’s terroir-driven character, resulting in a Pomerol that is at once expressive, balanced, and deeply rooted in its origins.

This refined Pomerol is an excellent partner for classic dishes such as roast lamb with herbs, tournedos Rossini, beef tenderloin, or slow-braised veal and beef stews. Serve at 16–18°C to highlight its aromatic complexity and supple texture.
