Ceritas Costalina Pinot Noir 2021 is a vibrant introduction to one of California’s most thoughtful Pinot Noir producers, combining fruit from some of the West Sonoma Coast’s most expressive vineyards. With its freshness, mineral drive, and beautifully layered red-fruit profile, it captures both the character of the coast and the precision of John Raytek’s winemaking.

Tasting Notes
In the glass, this Pinot Noir shows a bright, inviting profile with a lifted, elegant color typical of cool-climate Sonoma Coast fruit. The nose opens with raspberry, red cherry, blueberry, licorice, tobacco, and floral notes, giving it both charm and complexity. On the palate, red cherry, pomegranate, and cranberry take center stage, supported by dried spice, lively acidity, and a clean mineral edge. The wine feels fresh and refined rather than heavy, with enough structure to age gracefully for at least 7–8 years, developing additional depth and nuance over time.

Production
Costalina is made from grapes sourced across vineyards in the West Sonoma Coast that John Raytek works closely with, including Hellenthal, Elliot, Occidental, and Porter-Bass. The fruit is hand-harvested, and around 15% of the grapes are fermented whole cluster, adding aromatic lift and texture. After a 15-day fermentation, the wine is aged for 16 months in oak barrels, 15% of which are new, allowing the wine to gain complexity without overshadowing its coastal fruit character.

Food & Serving
This Pinot Noir pairs beautifully with roast duck, grilled salmon, mushroom dishes, herb-roasted chicken, or pork tenderloin. Serve it slightly cool, around 15–17°C, and consider decanting for 20–30 minutes if drinking young to help the aromatics open up.
