Tasting Notes
In the glass, the 2019 shows a vibrant, deep ruby core with garnet highlights beginning to form at the rim, signaling both concentration and classic Brunello structure. The nose is refined yet intense, opening with red and black cherries, wild strawberries and blood orange, followed by layers of dried rose, violet, sweet spice, tobacco leaf, cedar and a subtle note of Mediterranean herbs and forest floor.
On the palate, this Brunello is precise and focused, with a beautiful interplay of juicy red fruit, savory undertones and fine, chalky tannins. Flavors of sour cherry, red plum and pomegranate are framed by hints of leather, cigar box, tea leaf and a saline, mineral edge that speaks clearly of its hillside terroir. The acidity is bright and mouthwatering, giving the wine lift and tension, while the finish is long, persistent and harmonious. The 2019 has the structure to age gracefully for 15–20 years or more, gaining complexity and tertiary notes with time, but it already offers impressive clarity and drinkability in its youth after proper aeration.
Production
Cerbaiona’s Brunello comes from a tiny, four-hectare estate on the eastern side of Montalcino, where vineyards sit on a mix of galestro (marl), limestone and clay, providing excellent drainage and a natural mineral backbone to the wine. The vines are low yielding, intentionally restricted to concentrate flavor and enhance aromatic complexity. All work is done by hand, from meticulous vineyard care and selective harvesting to sorting the grapes at optimal ripeness. In the cellar, Cerbaiona follows a firmly traditional approach: long, gentle fermentations with native yeasts and extended maceration, followed by aging in large neutral oak casks (botti), allowing Sangiovese and terroir to take center stage rather than new oak influence. Even the bottling, labeling and capsule application are performed manually, underscoring the artisanal attention to every detail.
Food & Serving
This is a classic Brunello di Montalcino to pair with rich, savory dishes: Florentine steak, slow-braised beef or veal, roasted lamb, game birds, ossobuco, and aged Tuscan cheeses such as Pecorino Toscano are all excellent matches. It also shines alongside truffle dishes, porcini mushrooms, wild boar ragù and robust pasta or risotto preparations. Serve at 16–18°C (60–64°F) in large Burgundy or Bordeaux-style glasses to allow the aromatics to unfurl. Decanting for 1–2 hours is recommended, especially in its first decade, to soften the tannins and reveal the full complexity of the 2019 vintage.
