Tasting Notes
In the glass, it shows a deep purple hue that borders on black, hinting at the wine’s intensity before the first sip. The nose opens with crème de cassis, violets, dark chocolate, and lifted accents of lilac, anise, and cardamom. The palate is generous and full-bodied, delivering layers of dark fruit, mocha, sweet tobacco, leather, cigar box, vanilla, and sweet licorice. The tannins are polished and round rather than drying, while the finish is warm, spicy, and persistent. Built for both immediate pleasure and long aging, this is a wine that can be enjoyed now or developed over the next 20–25 years.

Production
This Cabernet Sauvignon comes from carefully selected Napa Valley sites, with old vines, low yields, minimal irrigation, and fruit harvested at a high level of ripeness to achieve the classic Caymus style. The extended hang time helps build the wine’s deep color, concentration, and ripe fruit profile, though it also requires careful timing to preserve the crop. French oak is used thoughtfully, supporting the wine’s richness without overpowering its fruit.

Food & Serving
This wine pairs beautifully with grilled ribeye, roast lamb, braised short ribs, or richly flavored dishes such as mushroom pasta and truffle-accented cuisine. It is best served slightly below room temperature, around 16–18°C, and decanting for 1–2 hours is recommended if drinking young to help the aromas open fully.
