Cavit Quattro Vicariati Rosso Superiore 2022 is a refined Trentino DOC red that combines the structure of Cabernet Sauvignon with the supple fruit of Merlot. Sourced from hillside vineyards along the Adige River and matured for 18 months in barriques and small oak casks, it reflects the quality and regional expertise of Cavit, one of Trentino’s most influential cooperative wineries.

Tasting Notes
The wine displays a clear ruby-red colour. Its aromatic profile is expressive and inviting, with ripe plum and blackberry layered with balsamic nuances, subtle spice and hints of tobacco from its oak maturation. On the palate, it is beautifully balanced, combining a soft, rounded texture with fine-grained tannins. Dark fruit flavours unfold alongside gentle spice and balsamic notes, leading to a warm, enveloping finish. It is approachable now, while its structure should allow it to develop further over the next few years when properly stored.

Production
The Cabernet Sauvignon and Merlot grapes are grown on the slopes alongside the Adige River in Trentino, where the hillside sites help provide freshness and concentration. The blend consists of 70% Cabernet Sauvignon and 30% Merlot. After vinification, the wine is matured for 18 months in barriques and small oak casks, allowing the fruit, tannins and oak character to integrate harmoniously. Specific harvesting methods are not provided.

Food & Serving
Serve at approximately 16–18°C. Its polished tannins and generous dark-fruit character make it an excellent match for grilled or roasted red meats, venison, hearty pasta dishes, mushroom risotto and mature cheeses. Decanting for around 30 minutes can help open the balsamic and spicy aromas, although the wine can also be enjoyed directly from the bottle.
