Crafted exclusively from Grand Cru vineyards in Cramant, this cuvée showcases the finesse, chalky precision, and lingering elegance that make Côte des Blancs wines so sought-after. It’s a refined, terroir-driven Champagne that speaks more of place than of power, ideal for those who value subtlety and detail in the glass.

Tasting Notes
In the glass, this Blanc de Blancs shows a luminous pale gold hue with fine, persistent bubbles that form a delicate mousse. The nose is precise and mineral-driven, opening with notes of lemon zest, green apple, and white flowers, layered with chalk, fresh brioche, and a gentle touch of almond. On the palate, it is razor-fresh yet beautifully creamy, with a focused core of citrus and orchard fruit—think granny smith apple, pear, and a hint of white peach—wrapped in a saline, chalky texture that clearly reflects Cramant’s famous soils. Subtle pastry, hazelnut and biscuit notes appear on the mid-palate, leading to a long, mouthwatering finish with lingering minerality and a touch of chalky grip. Enjoy it now for its energy and tension, or cellar it for 3–7 years to allow the Chardonnay to develop more brioche, honeyed and nutty complexity.

Production
Sourced exclusively from Grand Cru vineyards around the village of Cramant in the Côte des Blancs, this Champagne is rooted in deep chalk soils that give remarkable tension and a distinct mineral edge. Grapes are typically harvested by hand at optimal ripeness to preserve acidity and fruit purity, with careful sorting in the vineyard and at the press. Vinification focuses on a gentle pressing of whole clusters, followed by a cool fermentation in stainless steel (and, depending on the cuvée, a portion in neutral oak) to retain freshness and precision. Extended aging on the lees in bottle builds texture and complexity, while a restrained dosage allows the natural character of the Grand Cru terroir to shine through.

Food & Serving
This elegant Blanc de Blancs is an exceptional match for refined seafood dishes—think oysters, scallop crudo, sashimi, lobster, and delicate white fish in light citrus or beurre blanc sauces. It also pairs beautifully with caviar, sushi, goat cheese, soft-rind cheeses, and simple dishes like lemon roast chicken or fine vegetable tempura. Serve well-chilled at 8–10°C (46–50°F). A brief 10–15 minutes in the glass is usually enough to let it open up; decanting is generally not necessary, but pouring into a larger-bowled white wine glass instead of a narrow flute will highlight its aromatic complexity.
