Castello di Ama Haiku 2021 is a striking Super Tuscan that brings together Sangiovese, Merlot, and Cabernet Franc in a bold yet refined expression of Tuscany. It combines dark, concentrated fruit with an unmistakable sense of place, balancing regional character with a modern international edge.

Tasting Notes
In the glass, it shows an inky, deep ruby color that immediately signals depth and intensity. The nose is layered and expressive, with aromas of black cherry, blackcurrant, espresso, graphite, smoke, spice, and subtle hints of leather and licorice. The palate is full-bodied and complex, with firm tannins, a concentrated core of ripe fruit, and savory spice accents. A long, fresh, mineral finish gives the wine lift and precision, while its structure and balance suggest excellent aging potential over the coming years.

Production
Haiku 2021 is crafted from carefully selected parcels in Castello di Ama’s top vineyards, grown on limestone-clay soils that contribute elegance, freshness, and a clear mineral signature. The wine is fermented and vinified with precision before spending 12 months in oak barrels, partly new, to build structure, finesse, and complexity while preserving purity of fruit.

Food & Serving
This wine pairs beautifully with grilled beef, roasted lamb, braised short ribs, game, truffle dishes, and aged hard cheeses. Serve it at around 16–18°C, and consider decanting for 1–2 hours to let the aromatics open and the tannins soften.
