Tasting Notes
In the glass, the 2024 Conte della Vipera shows a bright straw-yellow color with delicate green highlights, signaling freshness and youthful energy. The nose is immediately expressive, with lifted aromas of citrus zest, pink grapefruit and lime, intertwined with notes of green apple, white peach and ripe pear. Subtle layers of elderflower, fresh herbs and a faint flinty minerality add complexity, while a gentle hint of white blossom and very discreet spice suggests careful élevage.
On the palate, this is crisp, precise and beautifully balanced. The Sauvignon Blanc–driven profile (typically blended with a touch of Sémillon) brings juicy citrus and stone-fruit flavors, supported by lively acidity that keeps everything taut and refreshing. A fine, saline minerality runs through the mid-palate, giving a sense of place and lift. The finish is long, clean and sapid, with lingering notes of lemon peel, crushed herbs and wet stone. Production
Conte della Vipera is produced at Castello della Sala, Antinori’s picturesque estate nestled in the rolling hills of Umbria, not far from Orvieto. The vineyards sit at relatively high altitudes on well-drained, fossil-rich soils composed of clay, limestone and ancient marine sediments, which contribute both freshness and minerality to the wine. Grapes are harvested at night or in the coolest hours of the day to preserve aromatic purity and natural acidity, followed by gentle pressing and a carefully temperature-controlled fermentation in stainless steel. A short period of maturation on fine lees adds texture and complexity while maintaining the wine’s hallmark clarity and precision.

Conte della Vipera 2024 is a versatile food wine that shines with delicate, refined dishes. It pairs beautifully with fresh seafood—think oysters, shellfish, grilled prawns and simply prepared white fish—as well as sushi and crudo. It also complements goat’s cheese, burrata with herbs, light pasta or risotto with vegetables, asparagus, and lemon-based sauces, along with poultry and veal in delicate cream or citrus preparations. Serve well-chilled at around 8–10°C to highlight its aromatic lift and tension. Decanting is generally not necessary; simply open the bottle a few minutes before serving to allow the bouquet to unfold in the glass.
