Tasting Notes
In the glass, Liù 2021 shows a deep, luminous ruby color with youthful violet hues at the rim. The nose opens with pure, precise aromas of ripe red and black cherries, wild berries and plum, layered with notes of violets, fresh herbs, graphite and a subtle earthy minerality.
On the palate, the wine is medium to full-bodied yet remarkably lifted, with a sleek core of dark fruit framed by fresh acidity and finely grained tannins. Flavors of black cherry, raspberry and damson are interwoven with hints of cocoa, tobacco leaf and a savory, almost saline edge that speaks to its terroir. The early harvest keeps the wine tense and vibrant, avoiding heaviness while still delivering depth and concentration. Enjoyable in its youth for its purity and energy, Liù 2021 should evolve gracefully for 6–10 years, gaining additional complexity and softness with time in the bottle.
Production
Liù is sourced from estate vineyards in the hills of Panzano in Chianti, in the heart of Tuscany, where galestro and limestone-rich soils combine with excellent drainage and marked day–night temperature swings. These conditions, together with the estate’s careful agronomy, allow a slow, even ripening of Merlot, even in warm vintages. The fruit is farmed organically and biodynamically, hand-harvested very early to capture natural acidity and aromatic clarity. In the cellar, fermentation typically occurs with indigenous yeasts, and extraction is handled gently to privilege finesse over power. Maturation takes place in neutral vessels (such as concrete or large, used oak), emphasizing texture, purity of fruit and terroir expression rather than overt oak influence.
Food & Serving
Castello dei Rampolla Liù 2021 is a versatile partner at the table, pairing beautifully with Tuscan-inspired dishes such as grilled lamb chops with herbs, bistecca alla fiorentina, roast pork with fennel, or hearty pasta with ragù. It also complements mushroom risotto, aged Pecorino, and charcuterie featuring prosciutto or finocchiona. Serve at 16–18°C (60–64°F) to highlight its freshness and aromatic detail. A brief decant of 30–45 minutes is recommended in its youth to allow the wine to open up and fully express its layered fruit and floral notes.
