These conditions help preserve acidity while allowing Pinot Nero and Chardonnay to ripen slowly and evenly. Grapes destined for this Riserva are typically harvested by hand, with strict selection to ensure only the healthiest and most expressive clusters are used. The wine is produced using the traditional method: after an initial fermentation, the base wines are blended and bottled for the secondary fermentation, where they mature for an extended period on the lees to develop complexity, fine bubbles, and rich autolytic character. The Extra Brut dosage keeps the wine firmly on the drier side, emphasizing terroir, structure, and purity over sweetness.

This Franciacorta Riserva Extra Brut is a superb match for refined seafood dishes such as oysters, scallops, lobster, and delicate white fish, as well as sushi and sashimi where its acidity and minerality provide perfect contrast.
