Castello Bonomi Franciacorta Cuvée 1564 Brut Nature 2019 is a refined vintage sparkling wine from Lombardy, made from Chardonnay, Pinot Noir and the rare indigenous Erbamat grape. Produced exclusively according to the traditional method and finished without dosage, it offers exceptional precision, mineral freshness and a distinctly dry profile. The name Cuvée 1564 refers to the year in which Erbamat was first historically documented, celebrating the grape’s long connection with the Franciacorta region.

Tasting Notes
Bright and elegant in appearance, the wine shows a fine, persistent mousse. The aromatic profile combines delicate floral notes with vibrant citrus, chalky mineral nuances and subtle hints of toasted rye bread developed during its extended time on the lees. On the palate, pronounced acidity provides energy and structure, while the extended lees ageing contributes depth and a refined texture. The finish is clean, dry and beautifully balanced, with citrus and mineral notes lingering on the palate. It is drinking impressively now, and its structure and long lees ageing should allow it to develop further complexity over the coming years when stored properly.

Production
The grapes come from terraced vineyards on the western-facing slopes of Monte Orfano in the heart of Franciacorta. Vines are trained using the Guyot system, with carefully controlled yields, while Erbamat is grown in the highest vineyards of the Castello Bonomi estate. The grapes are hand-harvested at different stages of ripeness, beginning with Chardonnay, followed by Pinot Noir and Erbamat. After gentle pressing, each parcel is fermented separately in stainless steel at controlled temperatures, without malolactic fermentation. Chardonnay and part of the Erbamat mature for seven months in oak, while the Pinot Noir—vinified as a white wine—rests in steel. The final cuvée undergoes a second fermentation in bottle and spends more than 40 months on its lees before disgorgement without dosage.

Food & Serving
Its taut acidity and bone-dry finish make this Franciacorta an excellent partner for raw fish, oysters, shellfish, sashimi and sushi. It also works beautifully with delicate seafood dishes, lightly dressed salads and fresh goat’s cheese. Serve well chilled at approximately 8–10°C. Decanting is not normally necessary; pour gently into tulip-shaped sparkling wine glasses to preserve the fine mousse and allow the mineral and toasty aromas to open.
