The combination of warm Tuscan days, cool nights, and constant hillside breezes allows Sangiovese to ripen slowly, preserving acidity and aromatic detail. Grapes are carefully hand-harvested at optimal ripeness and sorted to ensure only the best clusters are used. Fermentation takes place in temperature-controlled vats with maceration on the skins to extract color, tannin, and aromatic complexity, followed by maturation in a combination of barriques and traditional larger oak casks.
