Case Paolin, Campo Dei Sass Prosecco Treviso Extra Dry

Case Paolin’s Campo Dei Sass is a classic Prosecco Treviso Extra Dry, made from Glera grapes grown north of Treviso. Bright, fruit-led and refreshingly balanced, it offers an approachable expression of the region’s celebrated sparkling-wine style.

Tasting Notes
Pale and clear in the glass, with a steady stream of fine bubbles. The lively aroma brings apple, pear, lemon and grapefruit, lifted by delicate floral notes. On the palate, fresh fruit and crisp acidity meet a persistent, energetic mousse; it has good flavour intensity without feeling heavy. Enjoy while the fruit and bubbles are at their freshest rather than cellaring it for extended ageing.

Production
The Glera grapes come from Case Paolin’s vineyards north of Treviso, on the iron-rich soils around Montello Hill. The estate works organically, and the grapes are hand-harvested into small crates in late September before being taken to the winery. Fermentation takes place in closed, pressurised tanks with selected yeasts. The finished wine has 11.5% alcohol and 13 grams per litre of residual sugar.

Food & Serving
Serve well chilled, around 6–8°C, with light fish dishes, seafood or other delicate appetisers. Its fresh fruit and lively bubbles also make it an easy aperitif. Decanting is not recommended; open just before serving to preserve its sparkle.
