Production
Cascina San Pietro sources Chardonnay from vineyards in the heart of Franciacorta, where a combination of morainic soils, good drainage, and moderating breezes from Lake Iseo help grapes achieve both ripeness and freshness. Grapes are typically harvested by hand to allow careful selection of healthy, perfectly mature bunches. After gentle pressing, the base wine is fermented in temperature-controlled stainless steel to preserve aromatics and purity of fruit. The second fermentation takes place in the bottle, following the traditional method used in Champagne, and the wine rests on its lees for an extended period to develop fine bubbles, texture, and subtle notes of pastry and toast before disgorgement and final dosage as Brut.
