Tasting Notes
Bright and pale in appearance, this Gavi opens with inviting aromas of lemon and other citrus fruits, complemented by delicate floral notes and pronounced mineral impressions. On the palate, it is fresh and well balanced, with a pleasing structure, crisp acidity and a remarkably long, clean finish. It is best enjoyed in its youthful, vibrant phase, though its structure should allow it to develop gracefully over the next few years when properly stored.

Production
The grapes are sourced from the Gavi area, where the estate’s vineyards benefit from elevated sites and a favourable Piedmontese microclimate. The fruit undergoes gentle pressing, followed by temperature-controlled fermentation in stainless-steel tanks at 18–20°C. The wine is then matured in stainless steel, preserving its citrus purity, mineral character and fresh, focused profile.

Food & Serving
Enjoy this Gavi well chilled at around 8–10°C as an aperitif or alongside sushi, shellfish, seafood and delicate white-fish dishes. Its refreshing acidity also makes it a natural match for light starters, salads and simply prepared dishes. Decanting is not necessary; serve directly from the bottle, or allow it a few minutes in the glass to reveal its floral and mineral nuances.

Cascina Ghercina was founded in 1871 and has been guided through successive generations by a clear philosophy: grow the grapes themselves and place quality first. In 2002, the family expanded its holdings with eight hectares of vineyards on southwest-facing slopes at approximately 360 metres above sea level, where the nearby Ghercina stream contributes to a distinctive microclimate. The estate also owns vineyards across Langhe, Alba, Roero, Asti, Monferrato and Gavi, supported by a partly underground 5,000-square-metre winery with storage capacity exceeding 15,000 hectolitres.
