Casanova di Neri IBBianco 2023 is a characterful Tuscan white from one of Montalcino’s most celebrated Brunello producers. Crafted in limited quantities from vineyards on the Spereta estate, it offers a refined alternative expression of this red-focused domaine. Vermentino and Grechetto combine to give a vibrant, textural wine that still echoes the elegance and precision for which Casanova di Neri is renowned.

Tasting Notes
In the glass, IBBianco 2023 shows a bright, luminous straw-yellow color with subtle green reflections, signaling its freshness and youth. The nose opens with fragrant citrus—lemon zest and tangerine—alongside white peach, green apple and crunchy pear. Layered beneath are floral notes of acacia and jasmine, hints of Mediterranean herbs, and a delicate saline-mineral edge that recalls the Tuscan landscape. On the palate, the wine is medium-bodied, crisp and focused, with Vermentino bringing lively acidity and sea-breeze salinity, while Grechetto contributes texture, structure and a gentle, rounded mid-palate. Expect flavors of ripe citrus, stone fruit and a touch of almond and white flowers, carried on a long, clean, mineral finish. Enjoyable now for its energy and purity, it will develop a bit more complexity and harmony over the next 2–4 years, gaining notes of honey, nuts and chamomile with short-term cellaring.

Production
Grown on the Spereta estate in Tuscany, the grapes for IBBianco come from vineyards influenced by a mix of clay-limestone soils and good elevation, which together preserve freshness while building aromatic intensity. The Vermentino and Grechetto are harvested at optimal ripeness, often picked in the cooler hours of the day to protect delicate aromas and natural acidity. After careful selection of the bunches, the grapes are gently pressed and the must is clarified before a cool, temperature-controlled fermentation in stainless steel to capture purity and precision of fruit. The wine typically rests on fine lees for a period, adding subtle creaminess and complexity without masking its bright, mineral-driven character, and is then bottled young to preserve its vibrant profile.

Food & Serving
IBBianco 2023 is an ideal partner for seafood and Mediterranean cuisine: think crudo, oysters, grilled prawns, seared scallops, or simple fish dishes with lemon and herbs. It also pairs beautifully with risotto primavera, vegetable-based pasta, fresh goat cheese, burrata with tomatoes, and light poultry dishes. Serve well-chilled at around 8–10°C (46–50°F) to highlight its freshness, allowing it to warm slightly in the glass to reveal more texture and complexity. Decanting is not necessary, but opening the bottle 10–15 minutes before serving will help the aromatics fully express themselves.
