From a tiny 82-year-old parcel high above the Rhine, the Carsten Saalwächter Spätburgunder Assmannshäuser Höllenberg 2021 is one of the most coveted Pinot Noirs to emerge from Germany in recent years. Sourced from minute, thick-skinned berries and shaped by the iconic grey slate of the Höllenberg, this is Saalwächter’s flagship wine from the Rheingau side. With only three barriques produced in 2021, it captures the cooler, darker and more mineral face of German Spätburgunder in exquisitely limited quantity.

Tasting Notes
In the glass, the 2021 Höllenberg shows a deeper, more intense ruby hue than many German Pinots, already hinting at its concentration and seriousness. The nose is immediately cooler and more restrained than the limestone-grown Ingelheim wines: think elderberry and blackcurrant (cassis), wild blackberry and black cherry, wrapped in notes of flint, cold smoke and wet slate. Layered beneath are floral tones of violet, a touch of bay leaf and subtle dried herbs, adding complexity without any heaviness. On the palate, the wine is wonderfully light-footed yet tightly coiled, with a precise, linear structure. The dark forest fruit is carried by vibrant, finely etched acidity and very fine, powdery tannins that give grip without rusticity. Savoury, stony minerality runs through the mid-palate, echoing graphite, crushed rock and a faint hint of game and spice. The oak is perfectly integrated, offering gentle frame rather than flavour. This is a wine built for patience: while already captivating with a short decant, it has the structure and energy to evolve beautifully over 10–15 years, gaining more silk, nuance and tertiary notes of undergrowth and truffle.

Production
The Assmannshäuser Höllenberg is one of Germany’s most storied Pinot Noir sites, a steep, Rhine-facing slope in the Rheingau dominated by heat-retaining grey slate. Here, high elevation and a cooling influence from the river create a long, slow ripening season, concentrating flavour in the tiny, old-vine berries while preserving piercing freshness. The 82-year-old vines are farmed with great care and low yields, and the grapes are harvested by hand in small boxes to keep the fruit intact. In the cellar, Carsten Saalwächter works with a gentle touch: a high proportion of whole berries and often some whole clusters are fermented with native yeasts, extraction is kept delicate, and the wine is aged in a very small number of French barriques. Sulphur is used sparingly and the wine is typically bottled with minimal intervention to let the vineyard’s slate-driven character and the vintage’s cool precision shine through.

Food & Serving
This refined yet structured Spätburgunder is a superb partner for elegant, savoury dishes. It shines with game birds such as guinea fowl or pigeon, roast duck with cherries, venison carpaccio, or braised rabbit. Earthy dishes with mushrooms, truffle, or root vegetables, as well as charcuterie and aged hard cheeses, also pair beautifully with its darker fruit and mineral backbone. Serve at 14–16°C in Burgundy stems, and, in its youth, decant for 1–2 hours to allow the aromatics to unfurl and the tannins to soften. With a few years of bottle age, a gentle splash-decant just before serving is all it needs.

Carsten Saalwächter is one of the leading new voices in German wine, based in Rheinhessen but working across select top sites, including the famed Höllenberg in Assmannshausen. In a relatively short time, he has built a reputation for remarkably precise, Burgundy-inspired yet distinctly German expressions of Spätburgunder and Chardonnay.
