Carsten Saalwächter’s Silvaner Grauer Stein 2021 is a distinctive, almost iconoclastic take on Silvaner from Rheinhessen. Named after the grey-tinted limestone (“Grauer Stein”) on which the vines grow, it channels a strikingly stony, mineral-driven character rather than overt fruit. Among Saalwächter’s wines, this cuvée is one of the clearest expressions of his precise, low-intervention style.

Tasting Notes
In the glass, the 2021 Grauer Stein Silvaner is pale to medium straw with a subtle, slightly smoky shimmer that hints at its time in large oak and on the lees. The nose is highly distinctive and reductive at first: think roasted popcorn, toasted sesame, struck flint and cool stone rather than classic, fruity Silvaner aromatics. With air, more nuance emerges—dried herbs, lemon zest, faint white flowers and a salty, chalky edge. On the palate it is taut, linear and almost ascetic in its precision. The fruit sits in the background—more yellow apple skin and citrus pith than juicy orchard fruit—while the main impression is of stone, chalk and a fine, savory, nutty reduction. The texture is silky yet firm, framed by vibrant acidity and a long, saline, herbal finish. This is a Silvaner built for evolution rather than instant gratification and should develop beautifully over 6–10 years, gaining depth, complexity and a more seamless integration of its reductive and mineral notes.

Production
The Grauer Stein vineyard is rooted in grey-colored limestone, which lends the wine its name and drives its emphatically mineral character. The Silvaner grapes are carefully hand-harvested to ensure only perfectly ripe, healthy fruit makes it to the cellar. After gentle pressing, the must is fermented and matured in traditional 600-liter Halbstückfässer (large oak casks), where the wine rests on its lees for nearly two years without fining. This extended élevage on the full lees builds texture and complexity while preserving a naturally reductive profile. Before bottling, only a minimal dose of sulfur is added to stabilize the wine, allowing the pure character of site, grape and vintage to shine through.

Food & Serving
This is a food wine first and foremost, best matched with dishes that echo its savory, mineral and subtly nutty facets. Try it with roasted poultry, veal schnitzel, grilled white fish, scallops or monkfish, as well as vegetable-focused plates like roasted cauliflower, celeriac, asparagus, or wild mushroom risotto. It also pairs beautifully with delicately spiced Asian cuisine—think sesame, ginger and light soy—where its reduction and herbal notes can really sing. Serve at 10–12°C, slightly cooler for an aperitif style and a touch warmer at the table to let the aromatics unfold. A brief decant of 20–30 minutes is strongly recommended, especially in its youth, to allow the initial reduction to open into greater complexity.

Carsten Saalwächter is one of the exciting new names in Rheinhessen, part of the generation redefining what this historic German region can deliver in terms of precision, character and terroir expression. From his family estate, he works predominantly with limestone-driven sites, crafting wines that are marked by clarity, tension and a distinctly mineral, often reductive style. Though still relatively young as a producer, Saalwächter has quickly gained attention among sommeliers and collectors for his meticulous vineyard work, thoughtful use of large oak and restrained cellar interventions. Wines like Silvaner Grauer Stein have helped position him as a key voice in the contemporary Rheinhessen landscape, showing just how profound and individual Silvaner can be in the right hands.
